Lately I have been devoted to refining my skills in the kitchen. Now that we are homeschooling the kids and I’m not running a business, I find myself drawn to serving my family well.
This part of life brings me so much joy and it has been so fun to learn these new skills.
I love baking breads and treats but I have never been a master in the other aspects of cooking. My little fam loves a good pasta and the first time I tried it, none of us were pleased with the outcome. I don’t think there were high hopes when I announced that we would be having homemade pasta for dinner.
This time it was a whopping success, so I figured, why not immortalize this culinary miracle? And guess what? It only takes 4 ingredients—ingredients that you probably already have on hand.
Eggs, flour, salt, and oil.
Eggs – We use fresh eggs from the backyard that our best girls so graciously gift us. But any eggs will do.
Flour – I prefer King Arthur’s Bread Flour for most of my needs. This is what I always have on I hand but any good quality all purpose flour will do.
Salt – Kosher salt is where it’s at. Your noodles will not have a good flavor if you skip this. You will also need to sprinkle salt into the water you cook your noodles in.
Oil – Extra Virgin Olive Oil is best. It will hydrate your dough and help it achieve the consistency needed.
Ingredients
- 3 eggs
- 2 cups of flour
- 1/2 tsp salt
- 1 tbsp oil
- Measure out your flour into a mound on a clean work surface.
- Using your fingers, create a little nest like hole in the middle of the floor.
- Crack eggs into hole and add remaining ingredients.
- With your fingers, carefully mix the flour into the rest of the ingredients. Be sure not to let your eggs run too far from the flour.
- Knead, knead, and knead. This part takes time and your hands will tire but knead your dough until you achieve a rich golden color and there aren’t any dry flour spots remaining.
- Roll your dough into a ball and with a bench scraper, cut into 3-4 equal sections. I didn’t do this but in hindsight, I wish I would have to make rolling much easier.
- One by one, roll your sections into a pasta roller. You will have to roll then fold your pasta over and roll through again. I did this 3-4 times and each time I put my roller on a slimmer setting to get a nice thin pasta. I have a good old fashioned pasta roller and maybe one day I will upgrade to the kitchen aid attachment but for now, I find there is something special in doing it by hand. Whatever you do, do not use a rolling pin. Trust me, it doesn’t work well.
- With a pizza cutter, cut your pasta to your desired width. I made some bow tie noodles but I found that I preferred just regular fettuccine noodles.
I paired these with Marry Me Chicken and they received the Ekvall kids’ stamp of approval.
If you want to cook your noodles right away, then boil them in your salted water for 2-4 minutes.
If you want to dry them out then you can hang them individually on something or gather them into serving sized clusters and let them dry on the counter!
